摘要:為保證石鰈魚(yú)的質(zhì)量安全,應(yīng)用HACCP 原理對(duì)石鰈魚(yú)養(yǎng)殖環(huán)節(jié)從苗種驗(yàn)收到裝箱出口的全過(guò)程進(jìn)行危害分析,確定顯著危害以及苗種接受,水源選擇,飼料驗(yàn)收,藥物驗(yàn)收,藥物使用5個(gè)關(guān)鍵控制點(diǎn),在關(guān)鍵控制點(diǎn)上設(shè)立關(guān)鍵限值,進(jìn)行重點(diǎn)監(jiān)控、記錄、糾偏和驗(yàn)證。多年實(shí)踐表明,HACCP體系應(yīng)用于石鰈魚(yú)養(yǎng)殖,既保證了石鰈魚(yú)的質(zhì)量安全,又降低了企業(yè)養(yǎng)殖成本。

Abstract: Apply the HACCP principal to conduct hazard analysis on the full aquaculture path of exported stone flounder from fingerlings acceptance to bin packing for export and to confirm its obvious harms and five critical control points, such as fingerlings acceptance, water source selection, feed acceptance, veterinary drug acceptance and veterinary drug use. The critical limits were established at the critical control points to conduct focal monitoring, record, modification and verification. The practice for many years showed that application of HACCP in the aquaculture not only further guaranteed the safety of exported stone flounder, but also reduced culture cost.

石鰈魚(yú)(Kareius bicoloratus)是我國(guó)北方重要的海水養(yǎng)殖魚(yú)類(lèi),以其肉質(zhì)細(xì)嫩、味道鮮美、營(yíng)養(yǎng)豐富、生長(zhǎng)速度快、病害少、市場(chǎng)暢銷(xiāo)等諸多優(yōu)點(diǎn)被廣大養(yǎng)殖戶(hù)所鐘愛(ài)深受消費(fèi)者歡迎[1]。石鰈魚(yú)的養(yǎng)殖區(qū)域主要分布于我國(guó)的黃渤海,尤其是山東省的萊州市已成為全國(guó)最大的石鰈魚(yú)養(yǎng)殖與出口基地。近年來(lái), 韓國(guó)對(duì)我國(guó)石鰈魚(yú)的需求量激增, 使得黃渤海地區(qū)石鰈魚(yú)養(yǎng)殖迅速發(fā)展,養(yǎng)殖面積的不斷擴(kuò)大。2013年,萊州出口活石鰈魚(yú)超過(guò)600噸,貨值近千萬(wàn)美元。危害分析與關(guān)鍵控制點(diǎn)(HACCP)體系是以科學(xué)性和系統(tǒng)性為基礎(chǔ),識(shí)別特定危害,確定控制措施,以確保產(chǎn)品安全性。HACCP是一種評(píng)估危害和建立控制體系的工具,著重強(qiáng)調(diào)對(duì)重點(diǎn)環(huán)節(jié)的預(yù)防,而不是主要依賴(lài)于對(duì)最終產(chǎn)品的檢驗(yàn),屬于動(dòng)態(tài)的安全管理體系[2,3]。養(yǎng)殖水產(chǎn)品質(zhì)量安全問(wèn)題的產(chǎn)生和控制關(guān)鍵在養(yǎng)殖階段,從養(yǎng)殖到餐桌這一整個(gè)食品鏈條,養(yǎng)殖環(huán)節(jié)是源頭,將HACCP體系應(yīng)用到水產(chǎn)養(yǎng)殖階段[4],將產(chǎn)品的安全控制關(guān)頭提前至源頭階段,可以減少對(duì)最終產(chǎn)品的檢驗(yàn),有效利用檢驗(yàn)檢疫資源,對(duì)確保水產(chǎn)品的質(zhì)量安全具有事半功倍的效果。
