丙酸菌對糖類進行無氧的產(chǎn)生丙酸的發(fā)酵。作為丙酸的產(chǎn)生途徑,認為是經(jīng)過由糖開始的艾姆登-邁耶霍夫途徑所產(chǎn)生的丙酮酸,而丙酮酸則有如下的變化:
